For $100, last time I looked, you can buy screenflow - that will your screen, your webcam and your audio channels. So you can record the video from Skype, or indeed, use it to record demos. soundflower can route audio elsewhere - that's free but slightly tricky to set up. I've successfully used Powergramo. It's a little fussy to get it to talk to Skype, but then it works fine. I think they have a limited trial and then it is something like $25. I suspect anything that will record from the internal sound source (some CDR burning packages include this) would also work.
