Moses, if you haven't done so already, I recommend checking out the courselist at the Resource Center for Cyberculture Studies (actually, you may want to check the book section as well for potential readings). I have often browsed this section and found valuable ideas and readings throughout the courses. While it might not provide you with a "all in one box" perfect course to duplicate, you may find some inspiration. I recall specifically that there was at least one course listed on Internet Literacy which may address many of the topics/content areas that may be of interest to you.
