Many people are choosing to just go to mastodon.social which is the one run by the person who maintains Mastodon. It's a good default if you don't know where else to go, but it won't help curate your feed really.
There is also scholar.social but I've heard some mixed things about it, and I'm not sure who's running it.
hci.social has a lot of folks from the HCI side of the computer science community.
Also there are starting to be some lists to help you find who to follow, e.g. this one of tech policy & society folks: https://someone.elses.computer/@mikarv/109257782127322261
Setting up something like this for AOIR might be a good idea!
