IANAS (I am not a scholar) but one interesting format I have participated in is qiqochat - http://qiqochat.com/about They've over elaborated it to make it a social platform in IMO, but in its elemental form it's a mash up of the zoom.us API and etherpad that allows very intuitive unconferencing including breakouts. Participants can jump from one 'table' to the next, and see who is where.
