I used Evaer to record sound and video and it worked very well for me: http://www.evaer.com/ Also, I had an iPad next to my computer to record the call as well (just the audio), just as a back up in case something went wrong with Evaer. If you only need the sound, there are free apps for recording on Apple devices which work well and the sound is good if you place the Apple device near the computer. I use camtasia and would largely recommend it.

Snaggit or Camtesia are not very expensive, don't have a limit on video record time, and allow you to edit your video recordings in the app.

I used MP3 Skype Recorder, but wouldn't recommend it. It initially worked really nicely with a Skype call but then stopped recording longer calls, without warning. Almost lost a good podcast interview. But, given how tech works, I had also been recording using Audacity, which worked, yay for backups!
Since then I've used iFree Skype Recorder <http://ifree-recorder.com/> and it's been stable.
This is just for audio, of course.

I cannot for the life of me figure out what I used to use!
Amolto Call Recorder has *not* been working for me.
